Sticks made from the bark of the cinnamon tree, an evergreen, which is native to Sri Lanka and South India. There are several species, the "true cinnamon", Ceylon Cinnamon (Cinnamomum verum) and two related species Cassia (Cinnamomum aromaticum) and Indonesian Cinnamon (Cinnamomum burmannii).

Cassia is the most common type of cinnamon in the US, but less popular in Europe due to health officials' warnings that it contains the mildly toxic substance coumarin.
